Tofu Mayo

Ingredients (use vegan versions):

* 12 oz silken tofu
* 1 tablespoon umeboshi vinegar
* 1 tablespoon balsamic vinegar
* 1 tablespoon tahini
* 1/2 teaspoon salt
* 1/2 teaspoon Dijon vegan mustard
* 1 tablespoon lemon juice
* 1 teaspoon horseradish
* 5 - 10 capers
* pinch of black pepper

Directions:

Variation - Add:

Ingredients (use vegan versions):

* 1 tablespoon each FRESH tarragon & bazil
* 1 bunch cress LEAVES

Directions:

Whirl the whole lot in a blender on LOW.
