Tofu Spinach Pesto

Ingredients (use vegan versions):

* (for Pasta and Pizza)
* 3/4 cup tofu, patted dry and crumbled
* 1/2 cup tofu cheese or any cheese substitute
* 1 tablespoon bazil
* 1/2 teaspoon oregano
* 1/2 parsley
* 1/2 cup chopped spinach
* 1 clove minced garlic
* 1/4 cup vegan soymilk
* salt & pepper (optional)

Directions:

Combine all ingredients in a saucepan and cook over low heat for 6-9
minutes.
